
Txogitxu - Perhaps the Best Steak in the World?
At first, it sounds like a tongue twister, but among meat lovers, Txogitxu meat is often referred to as the best steak in the world. Txogitxu beef comes from Spain, specifically from the Basque Country, and is the new superstar in the meat world. Txogitxu meat is fiery red and has an almost yellow layer of fat. Well, we at Butch had to try it out, of course, and fired up our Big Green Egg. But enough talking, steak pictures say more than a thousand words:

Ingredients for Txogitxu Steak
- Salt
- Pepper
- Meat: We got ourselves a 1.3-kilo bone-aged strip loin. If you need tips on where to order meat online, just ask us.
Step 1: Unpack the meat
Self-explanatory, hence no comment ;-)
Step 2: Let the meat come to temperature
Although we were outside, "room temperature" is the rule of thumb.
Step 3: Preheat the grill fully
Bring the grill - our favorite piece, Big Green Egg - to full heat.
