Mezzaluna
A specialty of triangle tools is mezzalunas. Traditionally, mezzalunas are used for chopping herbs and spices like basil and garlic or for chopping nuts and almonds – it's quick and easy. Depending on taste or purpose, food can be chopped from coarse to very fine. Through the manual process of chopping, you always keep an eye on the current status, and unlike using a food processor, you won't end up with mushy onion paste instead of fine onion cubes. Large mezzaluna models can also be used to cut flat baked goods like sheet cakes or pizza.
The rocking knives of the triangle brand are handcrafted and carefully sharpened in a multi-stage process. The fine honing is also done manually on the grinding belt. The hardened blade is a rarity among rocking knives – it is characterized by high sharpness and long durability. This sharp blade is an important factor when chopping herbs that contain essential oils, such as thyme and sage. With a dull blade, the herbs would be more likely to be crushed, causing the volatile oil and its aroma to be largely lost. When cutting with a sharp rocking knife blade, these essential oils and their delicious aromas are preserved.
Triangle tools offers both single-edged and double-edged rocking knives in its range. Single-edged models allow for more precise control, while double-edged ones can handle larger quantities of material more quickly. Rocking knives with two blades are also suitable for hashing, the chopping of meat. Hand-chopped hash or hashish has a different quality than machine-chopped meat. The finer, hand-cut variant is often needed for traditional dishes, for example as a base for Labskaus, a North German classic, or for Beuschel, a recipe from Austrian cuisine.
Two handles ensure safe handling of the rocking knives and optimal power transmission, allowing for fatigue-free work. With the handles, you have the choice between modern or traditionally shaped wooden handles or plastic handles. To preserve the sharpness of the blade and the beauty of the wooden handles, these rocking knives should be gently cleaned by hand. According to the manufacturer, models with plastic handles can occasionally be put in the dishwasher, but we at Butch recommend cleaning them under running water by hand.
The ideal complement to the rocking knives is the special rocking knife board. Triangle has brought a competent partner on board for this: This board is manufactured by the label „holzwerk-p“, a small wood workshop based in Solingen. In close collaboration, these cutting boards are created to match the shape of the rocking knife exactly. The spices and herbs to be chopped collect in the central hollow, conveniently lying under the blade. Small rubber feet on the underside of the board prevent slipping and increase safety.
