In this brewing method, the coffee powder remains in the water longer. If it were too fine, bitter substances and tannins would be dissolved, which we would like to avoid. In the ceramic filter, on the other hand, coffee that is ground too coarsely would cause the brewing water to pass through too quickly - this coffee would be thin and have little aroma.
