The Janus chef's knife features an 18 cm long blade made from a special steel coated with a Diamond-Like-Carbon (DLC) coating. On one hand, the steel alloy of the blade contains a high proportion of the rare element niobium. Niobium allows for the finest possible steel structure despite corrosion resistance, resulting in extremely high strength, durability, and edge retention. Additionally, the blade is coated with a few micrometers thick, yet extremely hard DLC coating. This matte black carbon layer is resistant to acids, high temperatures, and extremely scratch-resistant. A great side effect: the blade glides more easily through the cutting material because the coating has very low friction values. The combination of DLC coating, approximately 60 HRC hardness, single-sided hollow grind, and the slightly curved blade shape make this lightweight chef's knife an incomparable cutting tool in its class.
The massive and seamless handle in this variant is made from bog oak. These are subfossil oak trunks up to 5000 years old that have been lying in northern German moors and waters. The color of the wood varies between brownish and bluish-black tones. The transition between the blade and handle is adorned with a ferrule made of matte brushed stainless steel.
The Janus chef's knife is delivered in a high-quality matte black box with the Nesmuk certificate of authenticity.
