minoSharp Sharpening Stones & Sharpening Tools

The Japanese brand minoSharp stands for ceramic sharpening stones and sharpening tools of the highest quality. This label belongs to the company Yoshikin, just like the knife brand Global. It made sense for Yoshikin to offer high-quality sharpening tools in addition to professional-quality knives. These knife sharpeners were developed by Mino Tsuchida, who is also affectionately known as "Mr. Global". He is an internationally recognized expert in Japanese knives and knife sharpening. The minoSharp brand offers both professional sharpening stones and sharpening tools. Both can be used to sharpen knives to razor-sharpness.

The ceramic sharpening stones from minoSharp are available in two different versions: as single-sided sharpening stones with only one grit, ranging from coarse to fine, or as double-sided sharpening stones for flipping, with two different grits. Depending on the need and requirement, different grits are needed to sharpen a knife blade - more on this below in the text.

A quick and uncomplicated way to sharpen knives is with the help of so-called ceramic sharpeners. These minoSharp knife sharpeners are small, handy tools with ceramic rollers inside. Ceramic Sharpening Stones

MinoSharp's ceramic sharpening stones come in two different versions: single-sided stones with ONE grit, or double-sided reversible stones with TWO different grits. The choice of grit depends on the intended use: a coarse 240 grit is recommended if your knives already have small damages or have become very dull. The most common sharpening stone is the "Medium" variant with a 1000 grit. With it, you can sharpen knives that have become dull due to frequent use and can already achieve a high level of sharpness. For the ultimate finish, a fine grit of 6000 or higher is recommended. These sharpening stones are considered polishing stones, and with them, you can actually achieve the sharpness of a razor blade - of course, only if the quality of the starting material, i.e. the knife blade, allows for it.

All MinoSharp sharpening stones come with two sharpening aids and a non-slip sharpening base, which also serves as a practical storage box. The sharpening aids are clamped onto the back of the knife while working and help you to always maintain the correct angle between the sharpening stone and the knife blade. Because the exact sharpening angle is crucial for a truly sharp knife.

Ceramic sharpening stones from MinoSharp are, in our opinion, a perfect sharpening tool for our highly valued kitchen knives. Admittedly, sharpening with them is more time-consuming than with other methods, and it takes a little practice, but with the sharpening aids provided by MinoSharp, such as the sharpening guides, it's really not rocket science. You should plan some time and find a workplace where you can work with water. The stone is briefly soaked before use and constantly moistened. This allows it to absorb water, which provides permanent cooling during sharpening. The abrasion of the stone, in combination with the water, creates a kind of sharpening paste that, unlike dry sharpening, only causes minimal but efficient material removal on the knife blade.

Knife sharpeners

A quick solution for dull knives are the knife sharpeners or sharpening tools from MinoSharp. These small tools are equipped with ceramic rollers through which the knife to be sharpened is pulled. The sharpening result does not quite reach the perfect edge achieved with ceramic sharpening stones, but it can certainly be seen or felt.
