The corrosion-resistant and polished stainless steel blades of the Wasabi Black series achieve a respectable hardness level of 56 HRC. Although this may not sound like much, since the knives are considered workhorses and are constructed accordingly, the hardness level appears higher in practice. The durability of the blades also surprised us and is more than satisfactory for knives in this price range. An additional, or rather THE additional advantage is that the blades can be relatively easily and quickly resharpened. The extensive series offers both double-edged and - traditionally Japanese - single-edged blade shapes.
Black Plastic Handle with Bamboo Powder
The water-resistant handle is made from a mixture of bamboo powder and polypropylene. Thanks to this mixture, optimal hygiene is ensured, and the knives are even up to the strict requirements of professional kitchens. The textured surface of the handles provides a secure grip, even with wet hands. And since the knives are relatively light, you don't have to worry about tendonitis after a cutting marathon. Of course, assuming it's not due to the cutting technique. The handle and blade are connected with a matte black ferrule. And yes, they are theoretically dishwasher safe. But forget that immediately, because: Knives do not belong in the dishwasher!
