The KAI Shun Classic Blade
The secret of the KAI Shun Classic knife series is a newly developed, stainless steel in the Damascus style. In total, there are 32 layers including a core made of hard VG MAX steel. The extreme hardness of 61 (±1) HRC with a carbon content of 1.0% and a cobalt content of 1.5% ensures high toughness, long durability, and a low tendency to chip. The convex grind of the blade, as well as the hand sharpening of each knife, creates a very appealing sharpness that remains permanent with proper care. And it is precisely this proper care that ensures you will enjoy these knives for many, many years. Through a final refinement, the distinctive Damascus grain is fully brought out. Each grain is unique, making each knife a distinctive one-of-a-kind piece.
The Shun Classic Handle
This handle is truly a classic, almost legendary. It is made of dark or ash-colored Pakka wood, which becomes particularly durable and long-lasting through the addition of high-quality resins. Thanks to the traditional Japanese chestnut shape with the slight edge on the right, the handle lies extremely comfortably and, above all, securely in the hand. The continuous tang ensures stability and balance. The perfect interplay between blade and handle allows you extremely precise control of the knife and fatigue-free cutting. The transition between blade and handle is marked by a beveled stainless steel bolster, which, like the end cap, harmonizes excellently with the blade visually.
