KAI Seki Magoroku Red Wood Yanagiba 24 cm - Carbon 1K6 Steel Blade - Pakkawood Handle
The large Seki Magoroku Red Wood Yanagiba has a 24 cm long blade made of rust-free Carbon 1K6 stainless steel with a hardness of approx. 58 HRC. The polished blade has a one-sided hollow grind, which minimizes friction between the cutting material and the blade. This allows for particularly precise cuts, as required for example in the preparation of sushi. The Yanagiba is therefore the preferred knife for filleting work in Asian cuisine. Thus, it is the counterpart to the European meat, filleting or ham knife.
Traditionally in chestnut shape, the handle is made of Pakka wood. High-quality resins added to the wood make the handle particularly durable and resistant to liquids. A ferrule made of shiny black plastic connects the narrow handle tapering towards the blade with the inserted blade. The light handle creates a nice balance to the blade, which allows effortless cutting.
The Seki Magoroku Red Wood series presents itself in a minimalist basic form. In combination with Japanese aesthetics, the knives are visually more than appealing. In practice, the knives even surpass the first impression. Another example of the famous Japanese knife art.
