KAI Seki Magoroku Hekiju Yanagiba 21 cm left-handed model - high-carbon stainless steel - resin handle
The small KAI Seki Magoroku Hekiju Yanagiba has a 21 cm long blade made of high-carbon stainless steel with a hardness of 58 HRC (±1). Here in the left-handed version. The blade achieves a high sharpness and durability through special manufacturing technologies, which is not typical for high-carbon stainless steel. The single-sided left sharpened Yanagiba is the traditional filleting knife in Japan. The narrow and pointed blade allows for cutting paper-thin slices of fish and meat. Thanks to this extremely precise cutting performance, the Yanagbia is the preferred knife for preparing sushi and sashimi.
In contrast to the Kinju knives, the handle of this left-handed knife is more rounded and made of robust resin with a leather-like embossing. The shape and material also provide a pleasant feel and the embossing ensures a secure grip. The blade and handle are connected by a high-quality plastic ferrule.
