KAI Seki Magoroku Hekiju Deba 15 cm left-handed model - high-carbon stainless steel - resin handle
The small KAI Seki Magoroku Hekiju Deba has a 15 cm long blade made of high-carbon stainless steel with a hardness of 58 HRC (±1). The blade achieves a high sharpness and durability through special manufacturing technologies, which is not typical for high-carbon stainless steel. The single-sided left sharpened Deba is traditionally used in Japan as a chopping knife. With the massive and wide blade, softer bones and fish bones can also be separated using the stronger rear part. The front, thinner part is mostly used for filleting fish.
In contrast to the Kinju knives, the handle of this left-handed knife is more rounded and made of robust resin with a leather-like embossing. The shape and material also provide a pleasant feel, and the embossing ensures a secure grip. The blade and handle are connected by a high-quality plastic ferrule.
