Even incredibly amazing knives like those from KAI need to be sharpened from time to time. Fortunately, the right tools are available for this: KAI sharpening accessories.
Sharpening KAI knives is not exactly easy, but it's also not rocket science. First, you should choose the right grit. Coarse grits around 400 are intended for sharpening knives as they remove steel. Fine grits, on the other hand, are intended for the final polishing of the blade. This is necessary because coarse grits leave tiny holes that can enlarge without polishing and affect cutting performance. Fine grits polish away the holes and the blade glides effortlessly again. Of course, you can also sharpen with only fine grits, it just takes a little longer. But your knife will thank you for it.
KAI sharpening stones are wet stones
Therefore, before sharpening, they must be completely soaked in water for about 10 minutes.
For single-sided sharpened knives, such as the Deba or Yanagiba, the knife is pulled over the sharpening stone at an angle of 45 degrees with light pressure against the blade. The number of movements depends on the desired sharpness or dullness. However, more than 15 movements are usually not necessary. Now you lay the knife flat on the sharpening stone with the other side and repeat the procedure. However, only a quarter as often (10 times on one side = 2-3 times on the other side). Finally, you clean the blade under running water and dry it with a soft cloth.
The procedure for double-sided sharpened knives is similar. However, the sharpening angle is only about 15 degrees. In addition, you should pull both sides of the blade over the sharpening stone with the same number of movements.
During sharpening, you should pay attention to the following:
- There should always be a light film of water on the surface of the sharpening stone
- Do not change the angle during sharpening. This is one of the main reasons why home sharpening often fails.
