Even incredibly great knives like those from KAI need to be sharpened from time to time. Fortunately, the right tools are offered for this: KAI sharpening accessories.

Sharpening KAI knives is not very easy, but it's also not rocket science. First, you should choose the right grit. Coarse grits around 400 are intended for sharpening the knives, as they remove the steel. The fine grits, on the other hand, are intended for the final polishing of the blade. This is necessary because coarse grits leave tiny holes that can enlarge without polishing and affect the cutting performance. The fine grits polish away the holes, allowing the blade to glide smoothly again. Of course, you can also sharpen with only fine grits; it just takes a bit longer. However, it will be good for your knife.

KAI sharpening stones are whetstones

Before sharpening, they need to be completely submerged in water for about 10 minutes.

For single-edged knives, such as the Deba or Yanagiba, the knife is drawn over the whetstone at a 45-degree angle with light pressure against the blade. The number of strokes depends on the desired sharpness or dullness. However, more than 15 strokes are usually not necessary. Now, place the knife with the other side completely flat on the whetstone and repeat the procedure, but only 1/4 as often (10 x single-sided = 2-3 x other side). Finally, clean the blade under running water and dry it with a soft cloth.

The procedure for double-edged knives is similar. However, the sharpening angle is only about 15 degrees. Additionally, you should draw both sides of the blade over the sharpening stone with the same number of strokes.

Things to keep in mind while sharpening:

- There should always be a light film of water on the surface of the sharpening stone
- Do not change the angle during sharpening. This is one of the main reasons why home sharpening often fails.
