Güde The Knife Chef's Knife made of 300 layers of Damascus steel

The Güde The Knife chef's knife made of Damascus steel is a high-quality and by no means conventional chef's knife. Its breathtaking beauty and unique handling make it a chef's knife for professional and hobby chefs alike.

The Manufacturing Process

In the Damascus steel forge of Markus Balbach, the forged chef's knives are made by hand in a particularly elaborate "composite fire welding process" at 1200°C from several layers. More than 300 layers of tool steel are used to produce a hard but still elastic steel. The knife production is continued in a further 40 work steps.

The grain of the blade is achieved by a special etching process. The steel is not rustproof. The knife handle is made of elegant grenadilla wood.

How to hold the Damascus steel knife correctly?

To have an optimal grip, you form a U with your thumb and index finger and securely grip the blade of the knife. Your middle finger is comfortably parked in the finely crafted bulge at the end of the blade. The remaining fingers grip the handle made of dark grenadilla wood. The center of gravity of the knife is perfectly located inside the hand.

When cutting, it shortens the lever. The force of your hand acts vertically downwards, making work more relaxed. Due to the grip and the centered weight of the knife inside your hand, the knife practically falls into the cutting material by itself.

Care instructions for Damascus steel knives

The knives are of course not dishwasher safe and not rustproof. Therefore, the blade should only be cleaned by hand. After cleaning, it is best to oil the blade with acid-free oil.
