The paring & garnishing knife is primarily designed for larding meat, as the tip allows for precise and accurate incisions. Additionally, this knife can also be used to beautifully and decoratively cut fruits and vegetables. The medium paring knife has a 10 cm long, narrow, and pointed blade made of stainless, hand-sharpened chrome-vanadium-molybdenum knife steel. The blade is rigid and allows for good control.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the tip of the blade to the double bolster. The double bolster, a unique feature of Güde knives, acts as a counterbalance to the blade. The knife is perfectly balanced. The special blend of steel and the elaborate manufacturing process, involving over 30 manual steps, give the stainless blades a special robustness and durability with a hardness of approximately 58 HRC.
