The salmon knife is intended for cutting salmon, as the name alone already suggests. We are happy to explain exactly why. For example, in order to cut smoked salmon into fine slices, you need a narrow, thin and above all long blade. Only with long, even strokes does it look the way it should. Of course, the knives are also suitable for other purposes. The salmon has not yet secured exclusive rights to its use.
The Kappa salmon knife has a 32 cm long blade made of rust-free and hand-sharpened chrome-vanadium-molybdenum knife steel. With the narrow and long blade shape, you can cut out fine slices with a few strokes.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the blade tip to the double bolster. The double bolster, a special feature of the Güde knives, provides a counterweight to the blade. The knife is perfectly balanced. The special blend of steel and the elaborate manufacturing process with over 30 manual work steps give the rust-free blades with a hardness of approx. 58 HRC a special robustness and durability.
The blade & handle are made from a single piece of steel. The extremely hygienic handle with the smooth polished surface fits optimally and securely in the hand. Due to the full metal design, the knives offer a unique weight distribution and balance.
