The Kappa hard cheese knife has a 10 cm long blade made of rust-free and hand-sharpened chrome-vanadium-molybdenum knife steel. The blade is rigid and the shape resembles a chef's knife. This allows you to apply sufficient pressure to the knife even with very hard cheese.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the blade tip to the double bolster. The double bolster, a special feature of the Güde knives, provides a counterweight to the blade. The knife is perfectly balanced. The special blend of steel and the elaborate manufacturing process with over 30 manual work steps give the rust-free blades with a hardness of approx. 58 HRC a special robustness and durability.
The blade & handle are made from a single piece of steel. The extremely hygienic handle with the smoothly polished surface fits optimally and non-slip in the hand. Due to the full metal design, the knives offer a unique weight distribution and balance.
