A filleting knife is for...? Right, for filleting. Unlike a chef's knife, it has a narrower and thinner blade. With it, you can trim meat and fish, i.e., remove skin and tendons. And then cut into wafer-thin pieces, i.e., fillet.
The flexible Kappa filleting knife has a thin and narrow blade with a length of 16 cm made of rust-free & hand-sharpened chrome-vanadium-molybdenum knife steel. The flexible steel adapts even better to the tendon. Of course, you can also use the filleting knife for many other cutting tasks.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the blade tip to the double bolster. The double bolster, a special feature of Güde knives, provides a counterweight to the blade. The knife is perfectly balanced. The special blend of steel and the elaborate manufacturing process with over 30 manual work steps give the rust-free blades with a hardness of approx. 58 HRC a special robustness and longevity.
The blade & handle are made from a single piece of steel. The extremely hygienic handle with the smoothly polished surface fits optimally and securely in the hand. The full metal design gives the knives a unique weight distribution and balance.
