The Kappa boning knife with its 13 cm long blade is designed for removing meat from the bone, also known as deboning. The double-sided hand-sharpened, narrow and pointed blade made of stainless chrome-vanadium-molybdenum knife steel allows you to make very precise cuts along the bone and the central bone.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the tip of the blade to the double bolster. The double bolster, a special feature of Güde knives, provides a counterweight to the blade. The knife is perfectly balanced. The special blend of steel and the elaborate manufacturing process with over 30 manual steps give the stainless blades a hardness of approx. 58 HRC, making them particularly robust and durable.
