The paring & garnishing knife is primarily intended for larding meat. The tip allows for fine & thin incisions. In parallel, this knife can also be wonderfully used to decoratively cut fruits & vegetables. However, these knives are mostly used as utility knives for all fine cutting tasks & peeling, for which they are perfectly suited. The 10 cm long, narrow & tapering blade is made from over 300 layers of steel in a wild Damascus style. Güde knives are hand-forged from a single piece of steel, including the double bolster. This acts as a counterweight to the blade and perfectly balances the knife. Thanks to ice hardening, the steel is particularly robust.
