When filleting knives get longer, they are no longer called filleting knives, but ham knives. Otherwise, everything is pretty much the same. A narrow & thin blade with which the finest slices or tranches can be cut. The ham knife has a 21 cm long, narrow & thin blade made of over 300 layers of steel in a wild Damascus style. It is slightly rounded at the tip. Güde knives are hand-forged from a single piece of steel including the double bolster. This is a counterweight to the blade and perfectly balances the knife. Thanks to the ice hardening, the steel is particularly robust. The finely polished handle scales made of rare and very hard desert ironwood are embedded in the steel and triple riveted.
