Güde can also do Japanese, at least Japanese blade shapes. The world-famous Santoku is the equivalent to the European chef's knife, the universal knife with which most cutting tasks are accomplished. In contrast to the European chef's knife, it has a straighter blade, which is only slightly rounded at the tip. This is due to a different cutting technique in the Asian region. The Santoku knife has a 14 cm long, wide blade with a slight curve at the tip made of over 300 layers of steel in the wild Damascus style. Here too, the blade often serves as a shovel. Güde knives are hand-forged from a single piece of steel including the double bolster. This is a counterweight and to the blade and perfectly balances the knife. Thanks to the ice hardening, the steel is particularly robust. The finely polished handle scales made of rare and very hard desert ironwood are embedded in the steel and triple riveted.
