When filleting knives get longer, they are no longer called filleting knives, but ham knives. Otherwise, everything is pretty much the same. A narrow & thin blade with which the finest slices or cuts can be made. The ham knife has a 26 cm long, narrow & thin blade made of rust-free & hand-sharpened chrome-vanadium-molybdenum knife steel with a fine serrated edge. This allows even somewhat harder ham to be cut into fine slices. The tip is slightly rounded. Güde knives are hand-forged from a single piece of steel including the double bolster. This is a counterweight to the blade and perfectly balances the knife. Thanks to the ice hardening, the steel is particularly robust. Black is also beautiful here: The knives of the Alpha series have embedded handle scales made of black, finely polished Hostaform and are inseparably connected to the knife thanks to triple riveting.
