Güde Alpha Ham Knife 26 cm - CVM Knife Steel - Handle Scales Hostaform
Long filleting knives are called ham knives. This ham knife is not necessarily suitable for paring, but it is excellent for cutting the finest slices or tranches. Thanks to the serrated edge, even with hard ham.
The large Alpha ham knife has a 26 cm long, narrow and thin blade made of rust-free and hand-sharpened chrome-vanadium-molybdenum knife steel with a fine serrated edge. This allows even somewhat harder meat to be cut into fine slices. The tip is slightly rounded.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the blade tip to the double bolster. The double bolster, a special feature of Güde knives, provides a counterweight to the blade. The knife is perfectly balanced. The special blend of steel and the elaborate manufacturing process with over 30 manual work steps give the rust-free blades with a hardness of approx. 58 HRC a special robustness and longevity.
The finely polished handle scales made of Hostaform are embedded in the steel and triple riveted. Hostaform plastic is extremely resistant, very hygienic and comfortable to hold. The Alpha series meets the strict requirements for use in the catering industry and offers the largest model variety.
