Güde Alpha Ham Knife 21 cm - CVM Knife Steel - Handle Scales Hostaform
From a certain blade length, filleting knives are then called ham knives. Otherwise, everything is as usual. A narrow & thin blade with which meat and fish can be trimmed and cut into the finest slices or tranches.
The Alpha ham knife has a 21 cm long, narrow and thin blade made of rust-free and hand-sharpened chrome-vanadium-molybdenum knife steel. It is slightly rounded at the tip.
Güde knives are hand-forged from a piece of chrome-vanadium-molybdenum steel, from the blade tip to the double bolster. The double bolster, a special feature of the Güde knives, provides a counterweight to the blade. The knife is perfectly balanced. The special mixture of the steel and the elaborate manufacturing process with over 30 manual work steps give the rust-free blades with a hardness of approx. 58 HRC a special robustness and longevity.
The finely polished handle scales made of Hostaform are embedded in the steel and triple riveted. Hostaform plastic is extremely resistant, very hygienic and comfortable to hold. The Alpha series meets the strict requirements for use in gastronomy and offers the widest variety of models.
