Any knife can be used for peeling, but the peeling knife allows you to shape fruits and vegetables more perfectly. In kitchen jargon, peeling and shaping is also known as tournieren. This is when potatoes are sometimes carved into crescent shapes.
The Alpha peeling knife has a 6 cm long blade, curved at the tip, made of rust-free and hand-sharpened chrome-vanadium-molybdenum knife steel. The curved tip, also known as Kniepe, allows for extremely precise fine and round cuts.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the tip of the blade to the double bolster. The double bolster, a special feature of Güde knives, provides a counterweight to the blade. The knife is perfectly balanced. The special blend of steel and the elaborate manufacturing process involving over 30 manual steps give the rust-free blades a hardness of approximately 58 HRC, making them particularly robust and durable.
The finely polished handle scales made of Hostaform are embedded in the steel and triple-riveted. Hostaform plastic is extremely resistant, very hygienic and comfortable to hold. The Alpha series meets the strict requirements for use in the catering industry and offers the widest range of models.
