Güde Alpha Olive Ham Knife 21 cm - CVM Knife Steel - Olive Wood Handle Scales
From a certain blade length, filleting knives are then called ham knives. Otherwise, everything is pretty much the same. A narrow & thin blade with which meat and fish can be trimmed and cut into the finest slices or tranches.
The Alpha Olive ham knife has a 21 cm long, narrow and thin blade made of rust-free and hand-sharpened chrome-vanadium-molybdenum knife steel. The tip is slightly rounded.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the blade tip to the double bolster. The double bolster, a special feature of the Güde knives, provides a counterweight to the blade. The knife is perfectly balanced. The special blend of steel and the elaborate manufacturing process with over 30 manual work steps give the rust-free blades with a hardness of approx. 58 HRC a special robustness and longevity.
The finely polished handle scales made of up to 500-year-old, selected olive wood are embedded in the steel and triple riveted. The very hard & resistant wood has a strong, elegant grain.
