Güde Alpha Olive Peeling Knife 6 cm - CVM Knife Steel - Olive Wood Handle Scales
Any knife can actually be used for peeling, but the peeling knife allows vegetables & fruit to be shaped more perfectly. In kitchen jargon, peeling and shaping is also called tournieren. This is where half-moon shaped potatoes are often carved.
The Alpha Olive peeling knife has a 6 cm long blade, curved at the tip, made of rust-free and hand-sharpened chrome-vanadium-molybdenum knife steel. The curved tip, also known as Kniepe, allows fine and round cuts to be executed extremely precisely.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the tip of the blade to the double bolster. The double bolster, a special feature of the Güde knives, provides a counterweight to the blade. The knife is perfectly balanced. The special blend of steel and the elaborate manufacturing process with over 30 manual work steps give the rust-free blades with a hardness of approx. 58 HRC a special robustness and durability.
The finely polished handle scales made of up to 500-year-old, selected olive wood are embedded in the steel and triple riveted. The very hard & resistant wood has a strong, elegant grain.
