Güde Alpha Olive Santoku Knife 18 cm - CVM Knife Steel - Olive Wood Handle Scales
Indeed, Güde can also do Japanese, at least such blade shapes. The world-famous Santoku is the equivalent to the European chef's knife. A universal knife, which is used in Japanese kitchens for almost all cutting work. In contrast to the chef's knife, it has a wider, straighter blade, which is only slightly rounded at the tip. This is due to the cutting technique preferred in Asia, chopping.
The Alpha Olive Santoku knife has an 18 cm long, wide blade with a slight curve at the tip made of rust-free and hand-sharpened chrome-vanadium-molybdenum knife steel. The wide blade often serves as a shovel here too.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the blade tip to the double bolster. The double bolster, a special feature of Güde knives, provides a counterweight to the blade. The knife is perfectly balanced. The special blend of steel and the elaborate manufacturing process with over 30 manual work steps give the rust-free blades with a hardness of approx. 58 HRC a special robustness and durability.
The finely polished handle scales made of up to 500-year-old, selected olive wood are embedded in the steel and triple riveted. The very hard & resistant wood has a strong, elegant grain.
