Since large ingredients in Asia need to be cut quite small due to the cooking methods, wider blades are necessary, which then also serve as a shovel. The handling takes some getting used to, but it is amazing how precise, indeed artistic, Chinese chefs can handle these knives.
The Chinese chef's knife from the Alpha Olive series has an 18 cm long, very wide blade made of chrome-vanadium knife steel. Large ingredients such as cabbage can easily be cut into fine strips and the wide blade can be used as a shovel.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the blade tip to the double bolster. The double bolster, a special feature of the Güde knives, provides a counterweight to the blade. The knife is perfectly balanced. The special blend of steel and the elaborate manufacturing process with over 30 manual work steps give the stainless blades with a hardness of approx. 58 HRC a special robustness and durability.
The finely polished handle scales made of up to 500-year-old, selected olive wood are embedded in the steel and triple riveted. The very hard & resistant wood has a strong, elegant grain.
