Güde Alpha Olive Chai Dao Knife 16 cm - CVM Knife Steel - Olive Wood Handle Scales
You're probably familiar with the Japanese Santoku. But have you heard of the Chai Dao? This is, in addition to the Chinese chef's knife, which looks like a cleaver to Europeans, a preferred knife in Chinese kitchens.
The Alpha Olive Chai Dao has a 16 cm long, very wide blade made of rust-free & hand-sharpened chrome-vanadium-molybdenum knife steel. With the wide blade, you can easily cut larger items and it is also used as a shovel.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the blade tip to the double bolster. The double bolster, a special feature of Güde knives, provides a counterweight to the blade. The knife is perfectly balanced. The special blend of steel and the elaborate manufacturing process with over 30 manual work steps give the rust-free blades with a hardness of approx. 58 HRC a special robustness and longevity.
The finely polished handle scales made of up to 500-year-old, selected olive wood are embedded in the steel and triple riveted. The very hard & resistant wood has a strong, elegant grain.
