A filleting knife is for...? Right, for filleting. Unlike a chef's knife, it has a narrower and thinner blade. With it, you can, for example, trim meat and fish, i.e., remove skin and tendons. And then cut into wafer-thin pieces, i.e., fillet.
The flexible Alpha filleting knife has a thin and narrow blade with a length of 18 cm made of rust-free & hand-sharpened chrome-vanadium-molybdenum knife steel. The flexible steel adapts even better to the tendon. Of course, you can also use the filleting knife for many other cutting tasks.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the blade tip to the double bolster. The double bolster, a special feature of Güde knives, provides a counterweight to the blade. The knife is perfectly balanced. The special blend of steel and the elaborate manufacturing process with over 30 manual work steps give the rust-free blades with a hardness of approx. 58 HRC a special robustness and longevity.
The finely polished handle scales made of Hostaform are embedded in the steel and triple riveted. Hostaform plastic is extremely resistant, very hygienic and comfortable to hold. The Alpha series meets the strict requirements for use in the catering industry and offers the widest range of models.
