The preparation knife, in terms of shape, resembles a larding and garnishing knife and is often the beloved knife, especially among female chefs. If you find the chef's knife too wide and heavy, the preparation knife is the perfect alternative.
The Alpha Fasseiche preparation knife has a 16 cm long, narrow blade made of rust-free and hand-sharpened chrome-vanadium-molybdenum knife steel. Despite the narrow blade, the knife is stiffer than, for example, a filleting knife.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the tip of the blade to the double bolster. The double bolster, a special feature of Güde knives, provides a counterweight to the blade. The knife is perfectly balanced. The special blend of steel and the elaborate manufacturing process with over 30 manual work steps give the rust-free blades with a hardness of approx. 58 HRC a special robustness and longevity.
The finely polished handle scales made from the oak wood of over 80-year-old wine barrels, called staves, are embedded in the steel and triple riveted. Due to the long maturation, the coarsely structured wood is extremely hard and almost indestructible. The Alpha Fasseiche series was created in collaboration with the Michelin-starred chef Harald Rüssel and his wife Ruth. Harald Rüssel's signature can be found as a laser engraving on each blade.
