The tomato knife is a larding and garnishing knife with a fine serrated edge. Especially ripe, soft vegetables and fruits such as tomatoes can be easily cut with this knife, if you do not have a well-sharpened knife at hand.
The Alpha Barrel Oak tomato knife has a 13 cm long, narrow & pointed blade made of rust-free and hand-sharpened chrome-vanadium-molybdenum knife steel. In addition, a fine serrated edge is ground into one side of the blade.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the tip of the blade to the double bolster. The double bolster, a special feature of the Güde knives, provides a counterweight to the blade. The knife is perfectly balanced. The special blend of steel and the elaborate manufacturing process with over 30 manual work steps give the rust-free blades with a hardness of approx. 58 HRC a special robustness and longevity.
The finely polished handle scales made from the oak wood of over 80-year-old wine barrels, called barrel staves, are embedded in the steel and triple riveted. Due to the long maturation, the coarsely structured wood is extremely hard and almost indestructible. The Alpha Barrel Oak series was created in collaboration with the Michelin-starred chef Harald Rüssel and his wife Ruth. Harald Rüssel's signature can be found as a laser engraving on each blade.
