Steaks require either a very sharp and thin blade, or a blade with a very fine serrated edge. This allows any tendons present to be finely cut.
The Alpha Barrel Oak steak knife has a 12 cm long blade made of chrome-vanadium-molybdenum steel with a very fine serration. If you encounter tendons in your steak, you can easily cut through them with the knife.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the tip of the blade to the double bolster. The double bolster, a special feature of Güde knives, acts as a counterweight to the blade. The knife is perfectly balanced. The special blend of steel and the elaborate manufacturing process with over 30 manual steps give the stainless blades with a hardness of about 58 HRC a special robustness and longevity.
The finely polished handle scales made from oak wood of wine barrels over 80 years old, called staves, are embedded in the steel and triple-riveted. Due to the long aging process, the coarsely structured wood is extremely hard and almost indestructible. The Alpha Barrel Oak series was created in collaboration with star chef Harald Rüssel and his wife Ruth. Harald Rüssel's signature is laser engraved on each blade.
