Steaks require either a very sharp and thin blade, or a blade with a very fine serrated edge. This also finely cuts any tendons that may be present.
The Alpha Fasseiche steak knife has a 12 cm long blade made of chrome-vanadium-molybdenum steel with very fine teeth. If you encounter tendons in your steak, you can easily cut through them with the knife.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the blade tip to the double bolster. The double bolster, a special feature of the Güde knives, provides a counterweight to the blade. The knife is perfectly balanced. The special blend of steel and the elaborate manufacturing process with over 30 manual work steps give the stainless blades with a hardness of approx. 58 HRC a special robustness and durability.
The finely polished handle scales made from the oak wood of over 80-year-old wine barrels, called staves, are embedded in the steel and triple riveted. Due to the long maturation, the coarsely structured wood is extremely hard and almost indestructible. The Alpha Fasseiche series was created in collaboration with the Michelin-starred chef Harald Rüssel and his wife Ruth. Harald Rüssel's signature can be found as a laser engraving on each blade.
