Details

The paring & garnishing knife is primarily designed for larding meat, as the tip allows for precise and accurate incisions. Additionally, this knife can also be used to beautifully and decoratively cut fruits and vegetables. Paring & garnishing knives can confidently be referred to as small utility knives, suitable for fine cutting tasks, peeling, and so on and so forth.

The large Alpha Barrel Oak paring knife features a 10 cm long, narrow, and pointed blade made of stainless, hand-sharpened chrome-vanadium-molybdenum knife steel. The blade is rigid and allows for good control.

Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the tip of the blade to the double bolster. The double bolster, a unique feature of Güde knives, acts as a counterbalance to the blade. The knife is perfectly balanced. The special blend of steel and the elaborate manufacturing process, involving over 30 manual steps, give the stainless blades a special robustness and durability with a hardness of approximately 58 HRC.

The finely polished handle scales made from oak wood of wine barrels over 80 years old, known as staves, are embedded in the steel and triple-riveted. Due to the long aging process, the coarsely structured wood is extremely hard and almost indestructible. The Alpha Barrel Oak series was developed in collaboration with star chef Harald Rüssel and his wife Ruth. Harald Rüssel's signature is laser-engraved on each blade.
