Güde Alpha Barrel Oak Ham Knife 21 cm - CVM Knife Steel - Handle Scales Made of Wine Barrel Oak Wood
From a certain blade length, filleting knives are then called ham knives. Otherwise, everything is basically as usual. A narrow & thin blade with which meat and fish can be trimmed and cut into the finest slices or tranches.
The Alpha Barrel Oak ham knife has a 21 cm long, narrow, and thin blade made of stainless and hand-sharpened chrome-vanadium-molybdenum knife steel. It is slightly rounded at the tip.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the blade tip to the double bolster. The double bolster, a special feature of Güde knives, acts as a counterweight to the blade. The knife is perfectly balanced. The special mixture of the steel and the elaborate manufacturing process with over 30 manual steps give the stainless blades with a hardness of about 58 HRC a special robustness and durability.
The finely polished handle scales made from oak wood of wine barrels over 80 years old, called staves, are embedded in the steel and triple-riveted. Due to the long aging, the coarsely structured wood is extremely hard and almost indestructible. The Alpha Barrel Oak series was created in collaboration with the star chef Harald Rüssel and his wife Ruth. Harald Rüssel's signature can be found as a laser engraving on each blade.
