From a certain blade length, filleting knives are then called ham knives. Otherwise, everything is as usual. A narrow & thin blade with which meat and fish can be trimmed and cut into the finest slices or tranches.
The Alpha Barrel Oak Ham Knife has a 21 cm long, narrow and thin blade made of rust-free and hand-sharpened chrome-vanadium-molybdenum knife steel. It is slightly rounded at the tip.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the blade tip to the double bolster. The double bolster, a special feature of the Güde knives, provides a counterweight to the blade. The knife is perfectly balanced. The special blend of steel and the elaborate manufacturing process with over 30 manual work steps give the rust-free blades with a hardness of approx. 58 HRC a special robustness and longevity.
The finely polished handle scales made from the oak wood of over 80-year-old wine barrels, called barrel staves, are embedded in the steel and triple riveted. Due to the long maturation, the coarsely structured wood is extremely hard and almost indestructible. The Alpha Barrel Oak series was created in collaboration with the Michelin-starred chef Harald Rüssel and his wife Ruth. Harald Rüssel's signature can be found as a laser engraving on each blade.
