Admittedly: sometimes quite easy, sometimes difficult and sometimes very complicated. But in the end, somehow it works with the chef's knife. The large Alpha Barrel Oak chef's knife has a wide and 16 cm long blade made of rust-free and hand-sharpened chrome-vanadium-molybdenum knife steel. The blade is rigid and slightly rounded towards the tip. This makes it easy and precise to process cutting material with the rocking cut technique. The chef's knife is suitable for almost 90% of all cutting tasks.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the blade tip to the double bolster. The double bolster, a special feature of the Güde knives, provides a counterweight to the blade. The knife is perfectly balanced. The special blend of steel and the elaborate manufacturing process with over 30 manual work steps give the rust-free blades with a hardness of approx. 58 HRC a special robustness and longevity.
The finely polished handle scales made from the oak wood of over 80-year-old wine barrels, called barrel staves, are embedded in the steel and triple riveted. Due to the long maturation, the coarsely structured wood is extremely hard and almost indestructible. The Alpha Barrel Oak series was created in collaboration with the Michelin-starred chef Harald Rüssel and his wife Ruth. Harald Rüssel's signature can be found as a laser engraving on each blade.
