Cheese is a wonderful conclusion to a lovely meal. And cutting hard cheeses like Parmesan, Pecorino or Emmental can be wonderfully celebrated with a suitable cheese knife.
The Alpha Barrel Oak Hard Cheese Knife has a 10 cm long blade made of rust-free and hand-sharpened chrome-vanadium-molybdenum knife steel. The blade is rigid and the shape resembles a chef's knife. This allows you to apply enough pressure to the knife even with very hard cheese.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the tip of the blade to the double bolster. The double bolster, a special feature of Güde knives, provides a counterweight to the blade. The knife is perfectly balanced. The special blend of steel and the elaborate manufacturing process with over 30 manual steps give the rust-free blades with a hardness of approx. 58 HRC a special robustness and durability.
The finely polished handle scales made from the oak wood of over 80-year-old wine barrels, called barrel staves, are embedded in the steel and triple riveted. Due to the long maturation, the coarsely structured wood is extremely hard and almost indestructible. The Alpha Barrel Oak series was created in collaboration with the Michelin-starred chef Harald Rüssel and his wife Ruth. Harald Rüssel's signature can be found as a laser engraving on each blade.
