Chopping vegetables and fruits is a joy. Okay, not for everyone. But the joy of the result is usually all the greater. And with a decent vegetable knife, it's not such a big ordeal.
The Alpha Fasseiche vegetable knife has a 9 cm long, almost straight blade made of rust-free & hand-sharpened chrome-vanadium-molybdenum knife steel. So it's perfect for all those precise fine works where long blades are too long.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the tip of the blade to the double bolster. The double bolster, a special feature of Güde knives, provides a counterweight to the blade. The knife is perfectly balanced. The special blend of steel and the elaborate manufacturing process with over 30 manual work steps give the rust-free blades a hardness of approx. 58 HRC, a special robustness and longevity.
The finely polished handle scales made from the oak wood of over 80-year-old wine barrels, called barrel staves, are embedded in the steel and triple riveted. Due to the long maturation, the coarsely structured wood is extremely hard and almost indestructible. The Alpha Fasseiche series was created in collaboration with the Michelin-starred chef Harald Rüssel and his wife Ruth. Harald Rüssel's signature can be found as a laser engraving on each blade.
