A filleting knife is for...? Right, for filleting. Unlike a chef's knife, it has a narrower and thinner blade. With it, you can, for example, trim meat and fish, i.e., remove skin and tendons. And then cut into wafer-thin pieces, i.e., fillet.
The Alpha Barrel Oak filleting knife has a thin and narrow blade with a length of 18 cm made of stainless & hand-sharpened chrome-vanadium-molybdenum knife steel. Of course, you can also use the filleting knife for many other cutting tasks.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the blade tip to the double bolster. The double bolster, a special feature of Güde knives, provides a counterweight to the blade. The knife is perfectly balanced. The special blend of steel and the elaborate manufacturing process with over 30 manual work steps give the stainless blades with a hardness of approx. 58 HRC a special robustness and longevity.
The finely polished handle scales made from the oak wood of over 80-year-old wine barrels, called barrel staves, are embedded in the steel and triple riveted. Due to the long maturation, the coarsely structured wood is extremely hard and almost indestructible. The Alpha Barrel Oak series was created in collaboration with the Michelin-starred chef Harald Rüssel and his wife Ruth. Harald Rüssel's signature can be found as a laser engraving on each blade.
