No, the Chinese chef's knife is not a cleaver, even if it appears to be. Unlike the cleaver, the blade is thinner and intended only for cutting. Since large ingredients in Asia need to be cut quite small due to the cooking methods, wider blades are necessary, which then also serve as a shovel. The handling takes some getting used to, but it is amazing how precise, even artistic, Chinese chefs can handle these knives.
The Chinese chef's knife from the Alpha Barrel Oak series has an 18 cm long, very wide blade made of chrome-vanadium knife steel. Large ingredients such as cabbage can easily be cut into fine strips and the wide blade can be used as a shovel.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the blade tip to the double bolster. The double bolster, a special feature of Güde knives, provides a counterweight to the blade. The knife is perfectly balanced. The special blend of steel and the elaborate manufacturing process with over 30 manual work steps give the stainless blades with a hardness of approx. 58 HRC a special robustness and longevity.
The finely polished handle scales made from the oak wood of over 80-year-old wine barrels, called barrel staves, are embedded in the steel and triple riveted. Due to the long maturation, the coarsely structured wood is extremely hard and almost indestructible. The Alpha Barrel Oak series was created in collaboration with the Michelin-starred chef Harald Rüssel and his wife Ruth. Harald Rüssel's signature can be found as a laser engraving on each blade.
