You're probably familiar with the Japanese Santoku. But have you heard of the Chai Dao? This is, in addition to the Chinese chef's knife, which looks like a cleaver to Europeans, a preferred knife in Chinese kitchens.
The Alpha Barrel Oak Chai Dao has a 16 cm long, very wide blade made of rust-free & hand-sharpened chrome-vanadium-molybdenum knife steel. With the wide blade, you can easily cut larger items and it is also used as a shovel.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the blade tip to the double bolster. The double bolster, a special feature of Güde knives, provides a counterweight to the blade. The knife is perfectly balanced. The special blend of steel and the elaborate manufacturing process with over 30 manual steps give the rust-free blades a hardness of approx. 58 HRC, making them particularly robust and durable.
The finely polished handle scales made from the oak wood of over 80-year-old wine barrels, known as staves, are embedded in the steel and triple riveted. Due to the long maturation, the coarsely structured wood is extremely hard and almost indestructible. The Alpha Barrel Oak series was created in collaboration with the Michelin-starred chef Harald Rüssel and his wife Ruth. Harald Rüssel's signature can be found as a laser engraving on each blade.
