Güde Alpha Barrel Oak Chai Dao Knife 16 cm - CVM Knife Steel - Handle Scales Made from Wine Barrel Oak Wood
You probably know the Japanese Santoku. But have you heard of the Chai Dao? This is, alongside the Chinese chef's knife, which looks like a cleaver to Europeans, a preferred knife in Chinese kitchens.
The Alpha Barrel Oak Chai Dao has a 16 cm long, very wide blade made of stainless & hand-sharpened chrome-vanadium-molybdenum knife steel. With the wide blade, you can easily cut larger food items, and it is also used as a scoop.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the tip of the blade to the double bolster. The double bolster, a special feature of Güde knives, acts as a counterbalance to the blade. The knife is perfectly balanced. The special blend of steel and the elaborate manufacturing process with over 30 manual steps give the stainless blades with a hardness of about 58 HRC a special robustness and durability.
The finely polished handle scales made from oak wood of wine barrels over 80 years old, called staves, are embedded in the steel and triple-riveted. Due to the long aging, the coarsely structured wood is extremely hard and almost indestructible. The Alpha Barrel Oak series was created in collaboration with star chef Harald Rüssel and his wife Ruth. Harald Rüssel's signature can be found as a laser engraving on each blade.
