Güde Alpha Pear Preparation Knife 16 cm - CVM Knife Steel - Pear Wood Handle Scales
The preparation knife, in terms of shape, resembles a larding and garnishing knife and is often the beloved knife, especially among female chefs. If you find the chef's knife too wide and heavy, the preparation knife is the perfect alternative.
The Alpha preparation knife has a 16 cm long, narrow blade made of rust-free and hand-sharpened chrome-vanadium-molybdenum knife steel. Despite the narrow blade, the knife is stiffer than, for example, a filleting knife.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the blade tip to the double bolster. The double bolster, a special feature of Güde knives, provides a counterweight to the blade. The knife is perfectly balanced. The special blend of steel and the elaborate manufacturing process with over 30 manual work steps give the rust-free blades with a hardness of approx. 58 HRC a special robustness and longevity.
The finely polished handle scales made of pear wood are embedded in the steel and triple riveted. Pear wood is extremely hard with a finely structured, velvety grain. The Alpha Pear series was launched on the occasion of Güde's admission by the Jeunes Restaurateurs d’Europe, Germany section, into the circle of Preferred Suppliers.
