Güde Alpha Pear Paring Knife 6 cm - CVM Knife Steel - Handle Scales Pear Wood
Any knife can actually be used for peeling, but the peeling knife allows you to shape vegetables & fruit even more perfectly. In kitchen jargon, peeling and shaping is also known as turning. This is when half-moon shaped potatoes are often carved.
The Alpha Pear Peeling Knife has a 6 cm long blade, curved at the tip, made of rust-free and hand-sharpened chrome-vanadium-molybdenum knife steel. The curved tip, also known as a knee, allows for extremely precise fine and round cuts.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the tip of the blade to the double bolster. The double bolster, a special feature of Güde knives, provides a counterweight to the blade. The knife is perfectly balanced. The special blend of steel and the elaborate manufacturing process involving over 30 manual steps give the rust-free blades a hardness of approximately 58 HRC, making them particularly robust and durable.
The finely polished handle scales made of pear wood are embedded in the steel and triple riveted. Pear wood is extremely hard with a finely structured, velvety grain. The Alpha Pear series was launched on the occasion of Güde's admission by the Jeunes Restaurateurs d’Europe, Germany section, into the circle of Preferred Suppliers. The logo of the association is engraved in the double bolster.
