The Alpha Pear Hacker or Cleaver has an 18 cm long, wide and thick blade made of rust-free and hand-sharpened chrome-vanadium-molybdenum knife steel. The blade is extremely stable and you can cut bones without worrying about your blade. But please watch out for your fingers!
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the blade tip to the double bolster. The double bolster, a special feature of Güde knives, provides a counterweight to the blade. The knife is perfectly balanced. The special blend of steel and the elaborate manufacturing process with over 30 manual work steps give the rust-free blades with a hardness of approx. 58 HRC a special robustness and durability.
The finely polished handle scales made of pear wood are embedded in the steel and triple riveted. Pear wood is extremely hard with a finely structured, velvety grain. The Alpha Pear series was launched on the occasion of Güde's admission by the Jeunes Restaurateurs d’Europe, Germany section, into the circle of Preferred Suppliers. The logo of the association is engraved in the double bolster.
