Güde Alpha Pear Boning Knife 18 cm - CVM Knife Steel - Pear Wood Handle Scales
A filleting knife is for...? Right, for filleting. Unlike a chef's knife, it has a narrower and thinner blade. With it, you can, for example, trim meat and fish, i.e., remove skin and tendons. And then cut into wafer-thin pieces, i.e., fillet.
The Alpha Pear Filleting Knife has a thin and narrow blade with a length of 18 cm made of rust-free & hand-sharpened chrome-vanadium-molybdenum knife steel. Of course, you can also use the filleting knife for many other cutting tasks.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the blade tip to the double bolster. The double bolster, a special feature of Güde knives, provides a counterweight to the blade. The knife is perfectly balanced. The special blend of steel and the elaborate manufacturing process with over 30 manual work steps give the rust-free blades with a hardness of approx. 58 HRC a special robustness and longevity.
The finely polished handle scales made of pear wood are embedded in the steel and triple riveted. Pear wood is extremely hard with a finely structured, velvety grain. The Alpha Pear series was launched on the occasion of Güde's admission by the Jeunes Restaurateurs d’Europe, Germany section, into the circle of Preferred Suppliers. The logo of the association is engraved in the double bolster.
