The Alpha Pear Deboning Knife with its 13 cm long blade is designed for removing meat from the bone, the so-called deboning or boning. The double-sided hand-sharpened, narrow and pointed blade made of stainless chrome-vanadium-molybdenum knife steel allows you to make very precise cuts along the bone and the central bone. The flexible steel adapts even better to the curves.
Güde knives are hand-forged from a single piece of chrome-vanadium-molybdenum steel, from the tip of the blade to the double bolster. The double bolster, a special feature of Güde knives, provides a counterweight to the blade. The knife is perfectly balanced. The special blend of steel and the elaborate manufacturing process with over 30 manual work steps give the stainless blades with a hardness of approx. 58 HRC a special robustness and durability.
The finely polished handle scales made of pear wood are embedded in the steel and triple riveted. Pear wood is extremely hard with a finely structured, velvety grain. The Alpha Pear series was launched on the occasion of Güde's admission by the Jeunes Restaurateurs d’Europe, Germany section, into the circle of Preferred Suppliers. The logo of the association is engraved in the double bolster.
