Global knives from Yoshikin in Japan are among the top 3 knife manufacturers worldwide for professional chefs. The hard and extremely sharp blades made of Cromova 18 steel with a hardness of 58±1 HRC are perfectly tailored to the daily work of professional chefs. The hand-sharpened edges have a high service life, are easy to sharpen (with the right sharpening tool) and resistant. In addition, the knives can be guided precisely, are optimally balanced, not too heavy and also meet the strictest hygiene regulations. With almost 100 different knives, which differ in blade shape, blade length and weight, almost every wish and preference can be fulfilled. 

Global knives of the classic series are divided into four categories:
1) the Global G Series includes knives from 16 cm blade length with punched blades & fine knife back
2) in the Global GS Series you will find knives up to 16 cm blade length, also with punched blade & fine knife back
3) the Global GF Series is for fans of heavier knives. The hand-forged blades (F) have a wider knife back
4) Blades of the Global GSF Series are forged, up to 16 cm long & depending on the type of knife have a slightly wider knife back
