Single-sided right sharpened Yanagiba with a blade length of 21 cm
Yanagiba knives are THE knives in Japan when it comes to filleting fish for sushi, for example. Precise cuts can be made with this knife and it can be used to portion fish into very thin slices. The pointed blade is also great for paring meat.
The blade is made of Cromova 18 steel with a hardness of 59 (±1) HRC. Unlike regular Global knives, the blades of the Bunmei series are finely sharpened, making them sharper.
The handle of the Bunmei series is made of Honoki wood, a light Japanese magnolia wood with fine grain. The handle of this knife is in the shape of a chestnut. The transition between the handle and the blade is marked by a plastic bolster.
