Single-sided right-ground Usuba with 18 cm blade length
The Usuba is a Nakiri with a single-sided grind. The single-sided grind allows for even more precise cuts and, for example, makes it easy to slice vegetables into paper-thin slices. Due to the single-sided grind, the food hardly sticks to the blade and practically "falls off".
The blade is made of Cromova 18 steel with a hardness of 59 (±1) HRC. In contrast to the regular Global knives, the blades of the Bunmei series are ground finer and therefore appear sharper.
The handle of the Bunmei series is made of Honoki wood, a light Japanese magnolia wood with fine grain. In this knife, the handle is in the shape of a chestnut. The transition between handle and blade is marked by a plastic ferrule.
