Global Bunmei Santoku 18 cm - Cromova 18 steel - Honokiholz handle
Symmetrically ground Santoku with an 18 cm blade length
The Santoku is the Japanese equivalent of a chef's knife and is also suitable for more than 90% of all cutting tasks. The blade shape is now similar for both types of knives. However, the blade and tang are slightly wider with the characteristic hump for the Santoku.
The blade is made of Cromova 18 steel with a hardness of 59 (±1) HRC. Unlike regular Global knives, the blades of the Bunmei series are ground finer, making them sharper.
The handle of the Bunmei series is made of Honoki wood, a light Japanese magnolia wood with fine grain. The handle of this knife is also symmetrically shaped. A plastic bolster marks the transition between the handle and the blade.
